I'm guessing that the fields around the track are going to be somewhat boggy and not suitable for my wheelchair. having not raced at Southport for a good few years, is there anywhere with solid ground that I can put my tent up and not worry that my wheelchair will not be able to move due to the mud? :(

Mark you are pitting in the clubhouse. Drive down the path (not across the field) and park by the clubhouse.
