Without a sensor cable the ESC cannot detect the rotor position of a stalled or very low motor rpm so it will only apply a very limit current to it until it starts to spin up.

B6.1 is indeed a right handful in the wet/damp. Ideally you need one of the more rearward gear boxes either the "layback" or "standup" as per the B6d as it moves both motor and battery more rearward....

Cant help you on the TX front since I do pistol grip not sticks but your old servo & esc should work fine as the as the 2.4g receivers still use the same PWM signal as the older stuff.
