Default Electrics for an original Optima

As you have probably seen, I have become smitten by an original optima which I'm going to rebuild and put more modern electrics in. Obviously I don't want to destroy the gears and chain, so any advice on suitable power? Would >15turn be ok or should I focus on an ESC that I can turn down the power delivery?

More modern you mean brushless? A 17.5T is usually around the same as a stock brushed motor, so I have been told, and most ESC allow to set the startup power, so you can lower the initial startup.
