As josh has said, with brushless motors there is pretty much only a sweet spot for most efficiency. You can go slightly either way for more top-end or excelleration. But the best thing to do would be to turn down the End-point on your tranny for the throttle. Which should reduce the amount of power that goes to the motor when yuor thumb is on full pelt. Or something like that.
